A Message From Francis
An extreme attention to detail is at the root of everything I do in Garzón.
Twenty-five years in the making, this project goes beyond the secluded properties I typically offer my guests. I plan to share my way of living: a life outside corporate glitz that embraces the elegant simplicity of life. I am interested in the intersection between silence and indulgence and I plan to share that with you here in Pueblo Garzón. I will be personally teaching each lesson.
The geography, the spaces, the cutlery, the glassware, the china, the table, and the excursions into the wild landscapes of Uruguay will all interact and overlap to create a once in a lifetime experience.
We believe deeply in comfort: in the best beds, Italian cotton sheets, the quiet luxury of things done well. In the small and secluded hamlet of Garzón, we offer 17 suites, as well as three private houses set in the hills of one of our farms. Guests can choose between the intimacy of a hotel suite in the vilage or the solitude of a house within the countryside.
For couples, if one chooses to participate in the cooking seminar, the other may indulge in various curated experiences: walks, picnics, tango lessons, horse riding, surfing, fishing in the ocean or lagoons, or exploring nearby restaurants. From the Ombú forests of Uruguay to journeys upriver toward the sea in one of our boats, each moment is designed to connect you with nature and yourself.
During your stay, you will also find, just across from Hotel Garzón, our ceramic and watercolor museum with work by Marie Ducaté, our coffee shop Carmen, our clothing boutique, and our pizzeria — small expressions of our world for you to enjoy.

Tuition for the Cooking Workshop includes accomodations, transfers to/from the airport, food and drink. Select activities are also included. Tuition does not include flights or optional activities.

Flights should be booked to Montevideo airport (airport code: MVD). Transfers will be available from the airport to Garzon and back to MVD. It’s a two hour drive. If you are interested in exploring the area after classes we recommend renting a car.

This workshop is designed for amateurs and professionals alike. Whether you’re looking to expand your technical skills or enter the world of live-fire cooking for the first time, you’ll have the opportunity to learn at your own pace. Francis has hosted cooking workshops all over the world and has created a dedicated team that will be available throughout the week to answer questions and help create an individual experience.

Please inquire about reduced tuition for accompanying guests who do not wish to participate in cooking lessons. Their tuition will include all other aspects (accommodation, transfers, food and beverage) as well as activities to participate in during the time of the cooking lessons, such as walks, picnics, tango lessons, horseback riding, surfing, and fishing among others.

The entire village of Garzon and the surrounding area will serve as the classroom for this workshop. Classes will move between Francis’ Restaurant, his private homes, farm, and the hill country, colloquially known as “Las Sierras.” Participants can expect a vibrant experience where setting and food carry equal weight in a way that only Francis is capable of creating.

Our Classrooms
For the first time in 7 years, renown chef, Francis Mallmann is opening his private home and kitchen for an extensive 9 day cooking experience in Pueblo Garzon, Uruguay with Estudio Garzon. In the late 1970’s Francis happened upon Pueblo Garzon- at the time a deserted tumbleweed town- and fell in love. For decades he held onto that affection quietly but eventually opened his flagship restaurant and hotel “Hotel Garzon” in 2003. In the subsequent 23 years Francis has built “Betabel,” a quiet cabin in Garzon’s country side, “Casa Anna,” a 7 bedroom estate in the village, “The Farm", an outdoor live fire kitchen overlooking the valley of Garzon, “The Molino” an old mill converted into an eatery as well as built a large community vegetable garden and helped with the revitalization of Garzon historic train station. All of these locations will serve as the backdrop for this romantic experience.
